With last weekend being full of festivities, we were in great food and company! My LMT girl Lisa and her hubby hosted Fight Night (UFC main event: Anderson Silva post-2013 leg injury) on Super Bowl Sunday Eve! Then I watched the Big Game with my Papa Jun!
Fight Night Feast: {clockwise from top L} Little Caesar’s Pretzel Pizza from yours truly * fruit w/chocolate fondue made by yours truly (Nutella & Philadelphia Cream Cheese) * veggies w/Ranch dressing * slider sandwiches w/Dijon mustard, turkey & cheese (either Swiss or Munster)
Portion control: Lisa sliced the pizza into smaller pieces, so more could be up for grabs!
These slider sandwiches were a hit! Hands down: they scored a touchdown @ this table!
Fun fact: Did you know that you burn more calories than you consume when you munch on celery due to the crunch? Challenge accepted!
After the fruit was gone, a fellow cat mama & I turned to the carrots to dip into the chocolate!
To top off my plate, I had my green drink to toast!

Almost two years ago exactly, I judged this Skills USA speech tournament, in which the students presented their interpretations of the word “champion.” What does it mean to you?
For me, a champion is someone who takes a winning approach to life, even in moments of defeat, one who still demonstrates good sportsmanship and holds her/his head up high without giving up. Last night, the NFC Champs won the “Big Game,” but the AFC Champs still are champions in my eyes because they still maintained a championship attitude. The heart of a champion does not feel like a loser even when it is beat.
This is what I aim to accomplish in my dissertation research and after I earn my Ph.D.: to show coaches that genuine leadership is based on developing their players into champions in life, not just in the game. I myself also am practicing this championship lifestyle by persisting along the way…
Before I get back to writing my study, I am about to go beast mode for energy. Speaking of which, here’s some comic relief that I posted on my friend’s Facebook last week:

Let us love GOD, His creatures and ourselves. With Valentine’s Day on the way in less than a month, I’ve encouraged my Pretty Fitstersto love themselves and those under their care.
Here, I discuss the importance of living the Pretty Fit Way, which comes from leading a healthy and happy lifestyle for ourselves and our children. That being said, we must not consider exercise as a chore (here’s an idea: dance cardioduring your chores), but rather, as an activity that we enjoy. Of course, the same goes for our kids, so we want them to choose workouts that they look forward to doing.

When I mention our loved ones, I’m not just extending them to people, but to our own animal companions as well. For those of us who are pet parents, if we want our fun, furry, fuzzy family and friends to live long lives, then we also must ensure that they have health. I’ve had health scares for my big, almost eight-year-old cat, Asia, for the past few years. Exactly two weeks ago today, on New Year’s Day, I found our latest one (a growth on her front right paw), Upon taking her to her and my little sweet Annie’s clinic — Windmill Animal Hospital (which I consider as the BEST animal healthcareever) — Dr. Price concluded that Asia’s condition (corn) came from being overweight and prescribed her this metabolic diet for her to shed pounds without deprivation.

Therefore, I have that typical New Year’s Resolution: to lose weight — not for myself, but for my older cat! Now this goal isn’t some form of vanity; it instead very much is an effort to lead her to a more active healthy life. Despite my disappointment in Asia’s sedentary nature and failed attempts to get her to exercise, Dr. Price pointed out that she may not be as playful as Annie because of her extra body mass preventing her from that ability, not necessarily resulting from an unwillingness. Since my Double A-Team can’t verbally voice their desires, I must look out for their best interest without them telling me.

Meanwhile, one way that I’m taking care of myself is by making progress with my dissertation. If any of you are connected with college administrators in the state of Texas, please network them to me as I’m seeking approval from NCAA-affiliated schools to recruit participants in my research. For my study, I plan to survey student-athletes, so here is my memo below:

I’m also THANKful for my fellow #USAF#MilitaryBrats Birthday Boys Davon Curry &Victor Rodriguez, who both have special places in my heart ♥ DBo & I used to write ol’ school letters when he was stationed out-of-state back in h.s. before social media was around + still inspires me to go #BeastMode to this very day! Vic was stationed in Germany where I was born, was kind to escort me to Winter Formal once, attended our Cooper High 10-yr reunion although he graduated elsewhere & hit a couple of #DallasMavericks games w/me!

Almost 2yrs have passed since I last posted, & so much has happened since then ~ most recently a positive addition to my lifestyle: Blogilates! Cassey Ho, the host of POP Pilates, POP Cardio, & HIITilates (high-intensity interval training) videos, has inspired her POPsters, including yours truly, through her workout sessions & healthy living advice. She keeps all of our exercises fun by playing upbeat tunes *[+ I love her themes like Victoria’s Secret Angel & Sailor Moon] – hence the POP – & gives us tough love – so we don’t stop (like my rhyme this time?)! With all of Cassey’s Blogilates social networks – Blogilates YouTube, BlogilatesTV, Facebook, Twitter, Instagram – I appreciate how this fitness expert (who has her degree in Biology w/honors) involves us – especially this month of JaNEWary during her birthday & giveaways – as we all commit to be fit! Ever since I started Blogilates – including the newly released POP Pilates DVD – + Cassey’s Pilates Bootcamp on Livestrong Woman & Perfect Pilates Body Workout Plan on WeightTraining.com, I’ve found much more improvement on my balance & strength + a new love for cooking + I feel & look better, thanks to her oGorgeous collection & tutorials on how to:
